Leftover Ham Fried rice

This recipe works perfectly with any left over meat, try ham, beef or chicken! 

Ingredients | Serves 2: 

  • 200g leftover ham, cut into chunks
  • 2 spring onions, thickly sliced (plus extra for serving)
  • 50g frozen peas
  • 2 eggs, beaten
  • 1 pouch of Nice Rice Pure Basmati 
  • 1 tbsp olive oil
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice wine vinegar
  • Chilli oil, to serve

 

Method

  1. Heat the olive oil in a large frying pan or wok over medium heat.

  2. Add the ham and fry for 2-3 minutes until it’s starting to crisp up.

  3. Toss in the spring onions and peas, cooking for another minute.

  4. Add the rice to the pan, breaking up any clumps with a spoon or spatula. Stir-fry everything together for 3-4 minutes until the rice is heated through.

  5. Push the rice, ham, and veg mixture to one side of the pan, making space for the eggs. Pour in the beaten eggs and let them cook for 20 seconds, then scramble gently. Once the eggs are just set, mix them through the rice.

  6. Drizzle over the soy sauce, sesame oil, and rice wine vinegar. Toss everything together to coat the rice evenly.

  7. Serve hot with a drizzle of chilli oil and a scattering of extra spring onions on top.
